Try grandma Emma’s delicious, comforting dumpling soup!
Make the dumpling dough: Break one egg, stir and measure out ½ egg. Combine with ½ teaspoon of salt and with 100 ml of water.
Place 250 grams (9 oz) of flour in the bowl of a stand mixer. Add the egg and water, and mix until smooth and elastic.
Finish kneading the dough by hand. Gather into a ball, cover and let relax for at least 30 minutes.
Grind 250 grams (8 oz) of beef and 1 onion. Add ½ teaspoon of salt and a pinch of ground black pepper. If the filling is too thick, add some water.
Large dice 3 potatoes, place in a pot and cover with two liters of cold water. Cover with a lid, bring to boil, and cook over low heat for about 20 minutes.
Small dice one onion, and grate 1 or 2 carrots, depending on their size. Heat 30 grams (1 oz) of whole or clarified butter in a large pan; add the grated vegetables and sauté over high heat for a few minutes.
Add the vegetables into the pot, season with two teaspoons of salt, or to taste. Continue cooking over low heat.
Make the dumplings: Cut the dough into 3 pieces, and roll out the dough- by hand or using a pasta machine, into a 1 mm thick sheet.
Spread the meat filling evenly over the dough. Roll the dough and cut into 2-3 cm pieces.
Turn the heat on high, add the dumplings, bring to boil and cook over low heat for about 5 minutes, or until the dumplings rise to the surface. Serve and enjoy!
