Whether you pick your fruits from the tree or get them from the grocery store, choose firm kumquats that are bright orange in color. Wash 2 kg (4.5 pounds) and cut into 4 mm thick slices, and remove the seeds.
Place 2 kg (4.5 pounds) of sugar and 500 ml (1 pint) of water in a large pot. Bring to boil, stirring to dissolve the sugar.
Add the kumquats to the boiling syrup, stir to mix well and turn off the heat. Set aside for 24 hours.
After 24 hours, bring the kumquats and the syrup back to boil. Skim the foam, turn off the heat and set aside for another 24 hours.
Bring to boil and simmer for 15-20 minutes, until tender. To test for doneness, dip a spoon into the preserve and pour some onto a plate. Let it cool, and run a spoon through the preserve. If the syrup sets and no liquid runs out- the kumquat preserve is ready.
Cool and store in jars, in a dry dark place. Serve this delicious, aromatic whole-fruit kumquat jam with homemade pancakes or French Toast.
