Make the dressing: Combine 50 grams (2 oz) of mayonnaise, 1 teaspoon of mustard, ½ teaspoon of paprika, ½ teaspoon of salt, ½ teaspoon of ground black pepper and 1-2 teaspoons of lemon juice and mix well.
Mince 30-50 (1-2 oz) grams of scallion or onion, peel and small dice 2 stalks of celery.
Small dice 5 hard-boiled eggs, combine with the dressing, celery and scallion, mix well and serve.
