Place 100 grams (3.5 oz) of sugar and ½ teaspoon of lemon juice in a saucepan.
Melt the sugar and cook to a deep umber color.
Remove from the heat, and gradually add 100 ml (4 fl oz) of warm water, stirring constantly with a whisk until combined.
Cool completely. We brushed our flourless chocolate-hazelnut cake layers with caramel simple syrup.
