Make tender, moist salmon with crisp herb and garlic crust.
Place 20 grams (0.7 oz) of soft butter in a bowl. Add a crushed clove of garlic, 15 grams of chopped parsley (0.5 oz), 25 grams (1 oz) of bread crumbs. Add ¼ teaspoon of salt and ¼ teaspoon of black pepper. Optionally, add a teaspoon of chopped almonds. Mix well.
Place a serving of salmon fillet (of about 250-300 grams, 8-10 oz) on a lightly oiled parchment paper lined baking dish, skin side down. Top the fish fillet with the herb & crumb mixture, pressing gently.
Bake at 200°C (390°F) for about 12-15 minutes, depending on the thickness of your fillet, until the fish flakes easily with a fork, or to desired doneness. Serve this delicious crusted salmon with potato gratin or with homemade pasta.
