Place 100 grams (3.5 oz) of butter in the bowl of a stand mixer. Add 120 grams (4 oz) of sugar, a pinch of salt, 5 grams of vanilla sugar and beat on high speed until light and creamy. Gradually add 2 eggs, scraping down the sides of the bowl once or twice. Beat until creamy and smooth.
Add 90 grams (3 oz) of chopped nuts and 250 grams (9 oz) of rolled oats.
Use two spoons, and place even pieces on a sheet tray lined with parchment paper. Flatten the cookies slightly.
