Core 6-7 apples and slice into 12 pieces.
Place 4 eggs in the bowl of a stand mixer. Add 240 grams (8.5 oz) of sugar and whip on high speed until light and fluffy.
Fold in 250 grams (9 oz) of sour cream.
Sift 160 grams (6 oz) of flour and 1 teaspoon of baking powder into the egg mixture and fold.
Add 100 grams (3.5 oz) of melted butter and fold.
Line a 26 cm (10 inch) cake pan with parchment paper and brush with butter. Spread About ¼ of the cake batter evenly over the bottom of the cake pan.
Spread the apples evenly over the batter, sprinkle with 1 teaspoon of ground cinnamon and 150 (5 oz) grams of raisins. Pour the remaining batter over the apples.
Bake at 180°C (350°F) for 1 hour. Test for doneness- an inserted skewer should come out clean. Cool in the pan for a few minutes, unmold and cool completely on a rack or a wooden board. Sprinkle with powdered sugar, serve and enjoy!
