Place 300 grams (10.5 oz) of chocolate and 300 grams (10.5 oz) of butter in a bowl set over simmering water. Stir occasionally until melted, and set aside.
Place 4 eggs in a bowl of a stand mixer. Add 600 grams (21 oz) of sugar, 1 teaspoon of vanilla sugar and a pinch of salt. Whip on high speed until light and thick, about 7-8 minutes.
