This raw beet salad is one of our family’s favorite salads. It is quick, easy to make, healthy and very tasty.
Peel and wash one large onion and small dice it.
Peel and wash 500 grams (18 oz) of beets. Cut into fine julienne using a mandolin.
Add 3 crushed cloves of garlic, 1 ½ teaspoons of salt and 1 ½ teaspoons of sugar. Add 50 ml (2 oz) of vinegar, mix and set aside.
Heat 80 grams (8 oz) of vegetable oil in a thick- bottomed sauté pan. Add the small-diced onion, cook until translucent and remove from the heat. Add 1 teaspoon of crushed coriander seeds, ½ teaspoon of ground black pepper and stir.
Add into the beets, mix, cover with a plate and refrigerate for at least 12 hours.
