Place 350 grams (10.5 oz) of almonds or hazelnuts on a sheet tray and bake in a preheated oven for 5 minutes. Remove from the oven and cool completely.

Place 4 egg whites in a bowl of an electric mixer fitted with the whip attachment. add a pinch of salt and whip on medium speed until soft peaks form. Increase to high speed and gradually add 300 grams (12 oz) of sugar and 10 grams (2 teaspoons) of vanilla sugar.
Gently fold the nuts into the meringue.
Use two spoons to scoop evenly spaced cookies of the same size onto a parchment paper lined sheet tray.
